Is there any way to provide proof of income for the self-employed, besides your tax returns.?

I recommend:
1) Proof of income could come in the following forms:
- Tax Returns
- CPA certified statements (preferably unqualified, maybe reviewed... least of all compiled)
- Any guaranteed contracts such as a long-term sales agreement with a customer (ie. your customer will purchase xxx quantity over xxx period of time for xxx dollars per unit.
- ledgers plus historical bank statements showing cash flow

The lending institution gets to decide what they will consider
as proof.

Talk to them and see if they will accept anything else.

You can't force anything on them, it is up to them to accept
your evidence or not.
Might there be receipts for services rendered?
I use quick books, so I can just print a report right from the system. If you have to report quarterly, you should be able to get documentation from your local IRS department as well.
Write a certified affidavit. This is generally accepted (I believe), as long as it's notorized, because if you are not truthful in your statements in this, you are held legally responsible.

You can also provide bank statements, which should be accepted. You don't have to disclose full details, just have the bank confirm what is in your account if that's all you want to disclose.
