What happens to your property and insurance money if you don't leave a will/beneficiary?

It is put into an estate account which is handled by the probate courts and finally distributed to the state. That is what I heard, how true it is I'm not sure.
It gets sold and the State takes all...unless you have a spouse or next of kin...then they get the debts....
