What do you do about health insurance if you're moving out of state?

Cobra would be kinda pointless because it only covers us in the state that we live in and I've heard that a lot of individual health plans have to be used for a certain number of months before you can cancel it. What do you do for that first three months in a new state while your waiting for employee benefits to kick in?

kinda late in the game, but what you do is negotiate your new employer to pick up the employee benefits on date of hire.

Also, I would check with the insurance to see how they would cover you if you're out of state - there is usually some "miles" provision if you don't live in zone - I had that problem when I lived in one zone and worked in another.
Try temporary insurance from Fortis (there are other companies that offer it)
Your COBRA coverage should be portable. If your plan has geographic limitations and you do not take it, the next best thing is short term insurance.
