ask the hotel to break the law that you are looking to break....
you don't. tell the people at the front desk that you would like to pay cash for the mini bar instead of having it show up on your company card.

silly, your picture is on your avatar. someone would recognize you and could tell your boss or the IRS. do the right thing.
I am assuming that you are not actually asking anyone how to violate tax laws.

What I think you are asking for is:
"How do I prevent mini-bar purchases from showing up on the hotel receipt that I will be submitting to my company for reimbursement."

That is as simple as asking the front desk clerk at checkout to provide a separate receipt. And, these days, most hotels automatically produce a separate receipt for mini-bar purchases, in-room movies, room service, etc... I would be surprised if the hotel you are staying at is any different.
This would be a crime -- stealing from your employer -- and you would probably be fired and possibly prosecuted for theft and sent to jail for doing this, so I would avoid it if I were you.
